Ingredients
  • 1 pound lamb shoulder, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup dried apricots
Instructions
  1. In a large skillet or Dutch oven over medium heat, brown the lamb on all sides.
  2. Add the onion and garlic and cook until softened.
  3. Stir in the cumin, coriander, turmeric, and cayenne pepper.
  4. Add the apricots and enough water to cover the meat by about 1 inch.
  5. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the meat is tender.
  6. Serve over rice or couscous.
