Lamb and Apricot Tagine
A comforting and flavorful dish that combines the rich flavors of lamb, sweet apricots, and warm spices.

Ingredients
- 1 pound lamb shoulder, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup dried apricots
Instructions
- In a large skillet or Dutch oven over medium heat, brown the lamb on all sides.
- Add the onion and garlic and cook until softened.
- Stir in the cumin, coriander, turmeric, and cayenne pepper.
- Add the apricots and enough water to cover the meat by about 1 inch.
- Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the meat is tender.
- Serve over rice or couscous.
