Wild Boar Burgers with Caramelized Onions
Our Wild Boar Burgers are a change from the typical beef burgers. With the addition of caramelized onions and our homemade Tzatziki sauce, it really brings the burger to another level. The caramelized onions adds a slight sweetness to the burger, while the Tzatziki sauce adds a refreshing and creamy balance. All this is then sandwiched between two paleo burger buns and some lettuce.
I've always been a fan of wild boar meat. It's got a richer flavor than beef, and it's also leaner. When I was younger, I used to go hunting with my father, and we would always bring home wild boar. My mother would cook it up for us, and it was always one of my favorite meals. Ingredients
  • 2 lbs ground wild boar
  • 1 small red onion, thinly sliced
  • 1 tablespoon olive oil
  • 2 tbsp Primal Kitchen Tzatziki Sauce
  • 4 leaves Boston lettuce
  • 4 paleo burger buns
Instructions
  1. Heat olive oil in a cast-iron pan over medium heat.
  2. Add onions and a pinch of salt, and cook for 5-7 minutes, until softened and lightly browned.
  3. Remove from pan and set aside.
  4. Form wild boar meat into four 1/2-inch thick patties. Generously season with salt and pepper.
  5. Place patties in the same pan over medium-high heat.
  6. Cook for 3-4 minutes per side for medium-rare, or until desired doneness.
  7. Top with caramelized onions and tzatziki sauce.
  8. Serve in paleo burger buns lined with lettuce for a gluten-free option.
