Ingredients
2 pounds beef or chicken bones (such as marrow bones, neck bones, or rib bones)
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 cup chopped leeks (white and light green parts only)
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
1 teaspoon dried oregano
1/2 teaspoon black peppercorns
Instructions
Preheat oven to 450 degrees F (230 degrees C).
Place the bones in a roasting pan and roast for 30 minutes, or until browned.
Add the vegetables, herbs, and spices to the roasting pan and stir to combine.
Add 8 cups of water to the roasting pan and bring to a boil, then transfer the mixture to a large stockpot.
Bring the broth to a simmer and skim off any foam that rises to the surface.
Simmer for 1 hour, or up to 24 hours for a more flavorful broth.
Strain the broth through a cheesecloth-lined sieve into a clean pot.
Let the broth cool and skim off any fat that rises to the surface.
