Quinoa Breakfast Bread was created by J. Kenji López-Alt, the chief culinary consultant for Serious Eats. López-Alt was inspired to create the bread after trying a similar bread made with oats. He wanted to create a bread that was just as hearty and flavorful, but with a lower glycemic index. Quinoa is a low-glycemic-index grain that is also a good source of protein and fiber. López-Alt used cooked quinoa in the bread to give it a moist and tender texture. He also added almond flour and flaxseed meal to the bread to increase its nutritional value. The bread is sweetened with maple syrup and is flavored with salt and baking soda. Quinoa Breakfast Bread is a delicious and healthy bread that is perfect for breakfast or a snack.
