Ingredients

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, combine tigernut flour, almond flour, coconut flour, honey, coconut oil, eggs, vanilla extract, and baking soda.
  4. Stir until just combined.
  5. Fill muffin liners to the top.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
