Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut oil, softened
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the almond flour, coconut oil, maple syrup, egg, vanilla extract, cranberries, walnuts, and baking soda.
  4. Stir until well combined.
  5. Drop by rounded tablespoons onto the prepared baking sheet.
  6. Bake for 10-12 minutes, or until golden brown.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
