Chia seeds have been a staple food in Central and South America for centuries. The Aztecs and Mayans prized chia seeds for their nutritional value and used them to make a variety of dishes, including gruel, porridge, and pudding. Chia seeds were also used as a form of currency and were often given as tribute to the gods. Today, chia seeds are still a popular food in many parts of the world and are often used in breakfast cereals, smoothies, and baked goods.

Why It Works
  • The coconut milk provides a rich, creamy base for the pudding.
  • The chia seeds absorb the coconut milk and swell, creating a thick, pudding-like texture.
  • The honey or maple syrup adds sweetness to the pudding.
  • The vanilla extract, cinnamon, and nutmeg add flavor and warmth to the pudding.
  • The pudding can be customized to your liking by adding nuts, seeds, or fruit.
