This recipe was inspired by a trip to Bolivia, where I had the pleasure of trying quinoa porridge for the first time. I was immediately hooked on its creamy texture and nutty flavor. When I got back home, I started experimenting with different recipes until I came up with this one. I've been making it ever since, and it's now one of my favorite breakfast cereals.

Ingredients
1 cup quinoa
2 cups almond milk
1/4 cup chopped almonds
1/4 cup chopped walnuts
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon almond extract (optional)
Instructions
Rinse the quinoa in a fine-mesh sieve.
In a medium saucepan, combine the quinoa, almond milk, almonds, walnuts, honey, cinnamon, salt, and almond extract (if using).
Bring the mixture to a boil over medium heat.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
Remove from heat and let stand for 5 minutes before serving.
Top with additional chopped almonds, walnuts, or fruit, if desired.
