Quinoa and Almond Porridge
Quinoa and Almond Porridge is a warm and comforting breakfast cereal with a nutty flavor and a creamy texture that will keep you full all morning long. It's made with quinoa, almond milk, almonds, walnuts, honey, cinnamon, salt, and almond extract (optional).
This recipe was inspired by a trip to Bolivia, where I had the pleasure of trying quinoa porridge for the first time. I was immediately hooked on its creamy texture and nutty flavor. When I got back home, I started experimenting with different recipes until I came up with this one. I've been making it ever since, and it's now one of my favorite breakfast cereals.

Ingredients
  • 1 cup quinoa
  • 2 cups almond milk
  • 1/4 cup chopped almonds
  • 1/4 cup chopped walnuts
  • 1 tablespoon honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract (optional)
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa, almond milk, almonds, walnuts, honey, cinnamon, salt, and almond extract (if using).
  3. Bring the mixture to a boil over medium heat.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  5. Remove from heat and let stand for 5 minutes before serving.
  6. Top with additional chopped almonds, walnuts, or fruit, if desired.
