Ingredients
  • 1 pound Brussels sprouts, trimmed and halved
  • 1/2 pound bacon, cooked and crumbled
  • 1 apple, cored and diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
  4. In a large bowl, combine Brussels sprouts, bacon, apple, and red onion.
  5. In a small bowl, whisk together Dijon mustard, olive oil, apple cider vinegar, salt, and pepper.
  6. Pour dressing over salad and toss to coat.
  7. Serve immediately.
