Brussels Sprout Salad with Bacon, Apples, and Dijon Dressing

Ingredients
1 pound Brussels sprouts, trimmed and halved
1/2 pound bacon, cooked and crumbled
1 apple, cored and diced
1/2 cup red onion, thinly sliced
1/4 cup Dijon mustard
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss Brussels sprouts with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
In a large bowl, combine Brussels sprouts, bacon, apple, and red onion.
In a small bowl, whisk together Dijon mustard, olive oil, apple cider vinegar, salt, and pepper.
