This shrub is a delicious and refreshing way to get your daily dose of beets and ginger. It's also a great way to use up any leftover beets you have on hand.

Ingredients
1 pound beets, peeled and chopped
1/2 cup grated ginger
1 cup apple cider vinegar
1/2 cup raw honey
1 tablespoon sea salt
1/4 teaspoon black peppercorns
1/4 teaspoon coriander seeds
1/4 teaspoon mustard seeds
Instructions
Combine all of the ingredients in a jar and shake well.
Let the shrub sit at room temperature for at least 24 hours, or up to 2 weeks.
Strain the shrub into a clean jar and store it in the refrigerator for up to 2 months.
To serve, mix 1 part shrub with 2 parts sparkling water or club soda.
