Ingredients
  • 1 pound ground beef

  • 2 cloves garlic, minced

  • 1 eggplant, chopped
  • 1 head of broccoli, chopped
  • 1 cup dairy-free milk
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  3. Add the onion, garlic, bell pepper, zucchini, eggplant, and broccoli to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the dairy-free milk and bring to a simmer. Reduce heat to low and cook for 10 minutes, or until the sauce has thickened.
  5. Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish.
