Slow Cooker Ham with Roasted Potatoes

Ingredients
  • 1 bone-in ham (about 5-6 pounds)
  • 1 cup water
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon minced garlic
  • 1 onion, sliced
  • 2 pounds potatoes, peeled and cubed
Instructions
  1. Place the ham in the slow cooker.
  2. Add the water to the slow cooker.
  3. In a small bowl, combine the honey, Dijon mustard, and garlic.
  4. Rub the honey mustard mixture over the ham.
  5. Add the onion to the slow cooker.
  6. Cook on low for 6-8 hours, or until the ham is cooked through.
  7. Remove the ham from the slow cooker and let rest for 15 minutes before slicing.
  8. While the ham is resting, roast the potatoes. Preheat oven to 400 degrees F (200 degrees C). Toss the potatoes with olive oil, salt, and pepper. Spread the potatoes on a baking sheet and roast for 20-25 minutes, or until golden brown and crispy.
