Ingredients
  • 1 block halloumi cheese, sliced
  • 2 peaches, pitted and sliced
  • 1/2 cup mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
Instructions
  1. In a large bowl, combine the mixed greens, red onion, peaches, and feta cheese.
  2. Drizzle with olive oil and lemon juice, and toss to combine.
  3. Season with salt and pepper, to taste.
  4. Heat a grill pan over medium heat.
  5. Add the halloumi slices and grill for 2-3 minutes per side, or until golden brown and slightly crispy.
  6. Remove from the grill and let cool slightly.
  7. Arrange the grilled halloumi slices on top of the salad.
  8. Sprinkle with fresh mint and serve.
