Ingredients
  • Chicken bones (from 1 whole chicken)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 parsnip, chopped
  • 1 cup chopped kale or spinach
  • 6 cups chicken broth
  • 1/2 cup paleo noodles (made from zucchini, sweet potato, or carrots)
Instructions
  1. In a large pot or Dutch oven, combine the chicken bones, onion, carrots, celery, parsnip, and kale or spinach.
  2. Add the chicken broth and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 1-2 hours, or until the chicken is tender and falling off the bones.
  4. Remove the chicken from the pot and set aside to cool.
  5. When the chicken is cool enough to handle, remove the meat from the bones and shred it.
  6. Add the shredded chicken and paleo noodles to the soup and heat through.
  7. Season to taste with salt and pepper, and serve hot.
