Ingredients
1 head of broccoli, chopped
1 onion, chopped
2 cloves of garlic, minced
3 cups of chicken broth
1 cup of unsweetened almond milk
1/2 cup of shredded cheddar cheese
Salt and pepper to taste
Instructions
In a large pot, heat some oil over medium heat.
Add the onion and garlic and cook until softened.
Add the broccoli and cook for 5 minutes, or until tender.
Add the chicken broth and bring to a boil.
Reduce heat to low and simmer for 15 minutes, or until the broccoli is soft.
Stir in the almond milk and cheddar cheese and cook until melted.
