Zucchini and Basil Soup
This zucchini and basil soup is the perfect way to use up your summer zucchini. It's light and refreshing, with a bright flavor from the basil. The soup is also very easy to make, and it can be ready in under an hour.
I first came up with this recipe a few years ago when I was looking for a way to use up a bunch of zucchini that I had growing in my garden. I wanted to make something that was light and refreshing, and that would showcase the flavor of the zucchini. I started by sautéing some onion and garlic in olive oil, then I added the zucchini and cooked it until it was softened. I then added some chicken broth, basil, salt, and pepper, and brought the soup to a boil. Once the soup was boiling, I reduced the heat and simmered it for 20 minutes. Finally, I pureed the soup with an immersion blender until it was smooth. The soup was a hit with my family and friends, and I've been making it ever since.

Why It Works
  • The combination of zucchini and basil is a classic for a reason. The zucchini provides a mild, slightly sweet flavor, while the basil adds a bright, herbaceous note. The two flavors complement each other perfectly, and the result is a soup that is both refreshing and flavorful.
  • Using an immersion blender to puree the soup is the best way to get a smooth, velvety texture. An immersion blender is also much easier to use than a traditional blender, and it makes cleanup a breeze.
  • Simmering the soup for 20 minutes allows the flavors to meld together and develop. The longer you simmer the soup, the more flavorful it will be.
