Ingredients
  • 1 gallon filtered water
  • 3 pounds organic grass-fed beef or chicken bones, or 1 cup vital proteins bone broth collagen powder
  • 2 organic carrots, roughly chopped
  • 2 organic celery stalks, roughly chopped
  • 2 organic leeks, white and light green parts, roughly chopped
  • 1 organic onion, quartered
  • 1 organic parsnip, roughly chopped
  • 1 tablespoon organic apple cider vinegar
Instructions
  1. Place the bones in a large stockpot or Dutch oven. Cover with water and add apple cider vinegar. Bring to a boil over high heat, then reduce heat to low and simmer for 24-72 hours, or up to 3 days.
  2. Strain the broth through a fine-mesh sieve into a clean pot. Discard the bones and vegetables.
  3. Add the chopped carrots, celery, leeks, onion, and parsnip to the pot. Bring to a boil over medium heat, then reduce heat to low and simmer for 30 minutes.
  4. Add 1 cup frozen or fresh blueberries, raspberries and strawberries.
  5. Remove from heat and let cool slightly.
  6. To serve, ladle the broth into bowls and top with additional berries, hibiscus flowers, and a drizzle of olive oil, if desired.
