Energy-Enhancing Bone Broth with Kale and Black Pepper
This bone broth is a seriously easy way to get your daily dose of vegetables and protein. It's made with just a few simple ingredients, and it's packed with flavor. The kale adds a nice dose of vitamins and minerals, and the black peppercorns add a bit of heat. This broth is perfect for a quick and healthy lunch or dinner, or it can be used as a base for other recipes.
I've always been a fan of bone broth. It's so flavorful and nutritious, and it's a great way to use up leftover bones. I used to make it the traditional way, by simmering bones in water for hours on the stovetop. But one day, I was in a hurry and I decided to try making it in the Instant Pot. It turned out great! The broth was just as flavorful as the traditional method, but it took a fraction of the time. I've been making it this way ever since.
Prep time: 15 | Cook time: 30 | Serves: 4
Ingredients
4 cups beef or chicken bone broth
1 bunch kale, chopped
1 teaspoon black peppercorns
1/2 teaspoon sea salt (optional)
1 tablespoon olive oil
1/2 onion, chopped
2 cloves garlic, minced
1/4 teaspoon dried thyme
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the garlic and thyme and cook for 1 minute more.
Add the bone broth, kale, and black peppercorns to the pot.
Bring to a boil, then reduce heat and simmer for 30 minutes, or until the kale is tender.
Season with salt to taste, if desired.
Serve hot and enjoy!
Why It Works
The combination of beef or chicken bone broth and kale provides a rich source of nutrients, including protein, calcium, and iron.
The black peppercorns add a bit of heat to the broth, which helps to balance out the richness of the broth.
