Ingredients
  • 2 pounds lamb bones
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon sea salt
  • 12 cups water
Instructions
  1. In a large pot or Dutch oven over medium heat, brown the lamb bones on all sides.
  2. Add the onion, carrots, celery, garlic, oregano, thyme, and salt to the pot and sauté until the vegetables are softened.
  3. Add the water to the pot and bring to a boil. Reduce heat to low and simmer for at least 8 hours, or up to 12 hours.
  4. Strain the broth through a fine-mesh sieve into a clean pot.
  5. Let the broth cool slightly and then skim off any fat that has risen to the surface.
  6. Serve the broth hot or store it in the refrigerator for up to 5 days.
  7. Reheat the broth over medium heat before serving.
