Ingredients
2 pounds turkey bones
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
8 ounces cremini mushrooms, sliced
1 teaspoon dried thyme
1 teaspoon dried oregano
12 cups water
Instructions
1. Preheat oven to 425°F (220°C).
2. Spread turkey bones on a baking sheet and roast for 30 minutes, or until browned.
3. Heat olive oil in a large pot over medium heat.
4. Add onion, carrots, and celery and cook until softened, about 5 minutes.
5. Add mushrooms, thyme, and oregano and cook for an additional 2 minutes.
6. Add roasted turkey bones and water to the pot.
7. Bring to a boil, then reduce heat and simmer for 24-48 hours.
8. Strain broth through a fine-mesh sieve and let cool.
