Ingredients
3 pounds grass-fed beef bones
2 carrots, peeled and chopped
2 celery stalks, chopped
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
10 cups water
Instructions
Preheat oven to 450 degrees F (230 degrees C).
Spread the beef bones on a baking sheet and roast in the preheated oven for 30 minutes, or until browned.
Transfer the bones to a large stockpot or Dutch oven.
Add the carrots, celery, onion, garlic, thyme, oregano, and water to the pot.
Bring to a boil, then reduce heat to low and simmer for 24 hours.
Strain the broth through a cheesecloth-lined sieve into a clean pot.
Let the broth cool completely, then store in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
