Ingredients
  • 3 pounds grass-fed beef bones
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 10 cups water
Instructions
  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Spread the beef bones on a baking sheet and roast in the preheated oven for 30 minutes, or until browned.
  3. Transfer the bones to a large stockpot or Dutch oven.
  4. Add the carrots, celery, onion, garlic, thyme, oregano, and water to the pot.
  5. Bring to a boil, then reduce heat to low and simmer for 24 hours.
  6. Strain the broth through a cheesecloth-lined sieve into a clean pot.
  7. Let the broth cool completely, then store in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
