Celery-Celestial Soup was created by my grandmother in the early 1900s. She was a poor farmer's wife, and she often had to make do with whatever ingredients she had on hand. One day, she was trying to make a soup for her family, and all she had was some celery, carrots, potatoes, and onions. She simmered the vegetables in water until they were tender, and then she mashed them up with a fork. The soup was a hit with her family, and they asked her to make it again and again. My grandmother eventually passed the recipe down to my mother, and I learned it from her when I was a child. I've been making Celery-Celestial Soup for my own family for years, and it's always a favorite. It's a simple, hearty soup that's perfect for a cold winter night.
