Ingredients
  • 4 pounds beef marrow bones
  • 2 tablespoons apple cider vinegar
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 8 cups water
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place the marrow bones in a roasting pan and roast for 30 minutes, or until they are browned.
  3. Transfer the bones to a large stockpot or Dutch oven.
  4. Add the apple cider vinegar, onion, carrots, celery, thyme, rosemary, oregano, and water to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for 12-24 hours, or until the broth is reduced by half and has a rich flavor.
