Ingredients
1 tbsp olive oil
1 large onion, diced
6 carrots, chopped
4 celery stalks, chopped
2 cloves garlic, minced
1 bay leaf
1 rosemary sprig
1 thyme sprig
1 pound beef bones
Instructions
Preheat the oven to 400°F (200°C).
Toss the bones with the olive oil and roast for 30 minutes.
Transfer the bones to a large stockpot and cover with water.
Add the onion, carrots, celery, garlic, bay leaf, rosemary, and thyme.
Bring to a boil, then reduce heat and simmer for 12 hours.
Strain the broth into a clean container and discard the solids.
Let the broth cool slightly before storing it in the fridge.
To serve, reheat the broth and season with salt and pepper to taste.
