Ingredients
  • 1 ripe plantain, mashed
  • 2 eggs
  • 1/4 cup almond milk
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil, for frying
Instructions
  1. In a large bowl, whisk together the mashed plantain, eggs, almond milk, coconut flour, baking powder, cinnamon, and salt.
  2. Heat the coconut oil in a large skillet over medium heat.
  3. Pour 1/4 cup of the batter into the skillet for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown.
