Prebiotic-Packed Plantain Gut-Healing Pancakes

Ingredients
- 1 ripe plantain, mashed
- 2 eggs
- 1/4 cup almond milk
- 1/4 cup coconut flour
- 1 teaspoon baking powder

- 1 tablespoon coconut oil, for frying
Instructions
- In a large bowl, whisk together the mashed plantain, eggs, almond milk, coconut flour, baking powder, cinnamon, and salt.
