The flaxseed meal and coconut oil help to bind the ingredients together and give the energy bites a chewy texture. These energy bites are easy to make and can be stored in the refrigerator for up to a week.
I first came up with the idea for these energy bites when I was looking for a healthy and portable snack to take with me on my hikes. I wanted something that was easy to make, didn't require any cooking, and would provide me with sustained energy. I experimented with a few different ingredients, and eventually came up with this recipe. These energy bites are now a staple in my hiking pack, and I often make a batch to keep in the refrigerator for snacks throughout the week.
