Ingredients
  • 1 tablespoon coconut oil or avocado oil
  • 1 bell pepper, sliced into thin strips
  • 1 zucchini, sliced into thin strips
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup chopped kale or spinach
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
Instructions
  1. Heat oil in a large skillet over medium-high heat.
  2. Add bell pepper, zucchini, broccoli, carrots, and onion. Sauté for 5-7 minutes, or until tender-crisp.
  3. Stir in garlic and kale or spinach. Cook until wilted.
  4. Season with salt and pepper to taste.
