Ingredients
Sweet potatoes, peeled and diced
Carrots, peeled and diced
Bell peppers, diced
Zucchini, diced
Kimchi
Fresh ginger, minced
Coconut oil
Salt and pepper
Instructions
Heat the coconut oil in a large skillet over medium heat.
Add the sweet potatoes and carrots and cook until softened, about 5 minutes.
Add the bell peppers, zucchini, and kimchi and cook until the vegetables are tender and slightly charred, about 5 minutes more.
Stir in the ginger and cook for 1 minute more.
Season with salt and pepper to taste.
