This recipe was inspired by my love of kimchi and my desire to create a gut-healthy dish that was also flavorful and satisfying. I experimented with different vegetables and spices until I came up with this combination, which is now one of my favorite go-to meals. Ingredients
  • Sweet potatoes, peeled and diced
  • Carrots, peeled and diced
  • Bell peppers, diced
  • Zucchini, diced
  • Kimchi
  • Fresh ginger, minced
  • Coconut oil
  • Salt and pepper
Instructions
  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the sweet potatoes and carrots and cook until softened, about 5 minutes.
  3. Add the bell peppers, zucchini, and kimchi and cook until the vegetables are tender and slightly charred, about 5 minutes more.
  4. Stir in the ginger and cook for 1 minute more.
  5. Season with salt and pepper to taste.
  6. Serve warm.
