Ingredients
  • 4 pounds beef marrow bones
  • 1 tablespoon apple cider vinegar
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Place the marrow bones on a baking sheet and roast for 30 minutes.
  3. Transfer the bones to a large stockpot.
  4. Add the apple cider vinegar, onions, carrots, celery, garlic, thyme, and oregano.
  5. Cover the bones with water.
  6. Bring to a boil, then reduce heat and simmer for 24 hours.
  7. Strain the broth and discard the bones.
  8. Let the broth cool and then store it in the refrigerator for up to 3 days.
