Ingredients
  • 1 head of cabbage, shredded
  • 1 head of cauliflower, shredded
  • 1 bunch of carrots, peeled and shredded
  • 1 bunch of celery, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of sea salt
  • 1/2 cup of filtered water
Instructions
  1. In a large bowl, combine the cabbage, cauliflower, carrots, celery, onion, garlic, sea salt, and water.
  2. Massage the vegetables with your hands until they start to wilt and release their juices.
  3. Transfer the vegetables to a clean glass jar and press down firmly to remove any air bubbles.
  4. Cover the jar with a cheesecloth or a loose-fitting lid and let it ferment at room temperature for 5-7 days.
  5. After 5-7 days, the vegetables will be fermented and ready to eat.
  6. Store the fermented vegetables in the refrigerator for up to 2 weeks.
