I first came up with this recipe when I was looking for a way to get more vegetables into my diet. I'm not a huge fan of eating vegetables on their own, but I love eggs, so I thought, why not combine the two? I started experimenting with different vegetables and spices, and eventually came up with this recipe. It's now one of my favorite breakfasts, and I often make it for my family and friends. They all love it, and they always tell me how much it helps them to focus and concentrate throughout the day.
