Ingredients
  • 2 pounds beef bones (such as marrow bones, knuckle bones, or soup bones)
  • 2 tablespoons avocado oil
  • 2 onions, chopped
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 12 cups water
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Place the bones on a baking sheet and roast for 30 minutes, or until browned.
  3. Heat the oil in a large pot or Dutch oven over medium heat.
  4. Add the onions, carrots, and celery and cook until softened, about 5 minutes.
