Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup honey
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, combine the almond flour, coconut flour, honey, eggs, applesauce, baking soda, baking powder, and salt.
  4. Stir until just combined.
  5. Fill the prepared muffin cups about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
