Ingredients
1 cup quinoa
2 cups water or broth
1 bunch kale, chopped
1/2 cup chopped red onion
1/2 cup chopped bell pepper
1/4 cup chopped avocado
1/4 cup chopped nuts or seeds
1/4 cup lemon-tahini dressing
Instructions
Rinse the quinoa in a fine-mesh sieve.
Combine the quinoa and water or broth in a medium saucepan.
Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the quinoa is cooked through.
Remove from heat and fluff with a fork.
In a large bowl, combine the quinoa, kale, red onion, bell pepper, avocado, and nuts or seeds.
Drizzle with the lemon-tahini dressing and toss to coat.
Serve immediately.
