Power-Up Paleo Pancakes
Our Paleo Pancakes are grain-free, gluten-free, and dairy-free, but they're still fluffy, flavorful, and filling. Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup almond milk
  • 1 tablespoon coconut oil, melted
Instructions
  1. In a large bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  2. In a separate bowl, whisk together the eggs, almond milk, and coconut oil.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined.
  4. Let the batter rest for 5 minutes.
  5. Heat a griddle or frying pan over medium heat.
  6. Grease the griddle or pan with coconut oil.
  7. Pour 1/4 cup of batter onto the hot griddle or pan for each pancake.
  8. Cook for 2-3 minutes per side, or until golden brown.
