I've always been a fan of cauliflower, but I never really knew what to do with it beyond roasting it with some olive oil and salt. One day, I was browsing through my favorite food blog, Serious Eats, when I came across a recipe for Celestial Cauliflower and Turkey Alfredo. The recipe looked simple and delicious, so I decided to give it a try. I'm so glad I did! This dish is absolutely amazing. The cauliflower is roasted to perfection, and the turkey is tender and flavorful. The creamy Alfredo sauce is the perfect finishing touch. I've made this dish several times since then, and it's always a hit with my family and friends. I love that this dish is so versatile. You can serve it over pasta, rice, or even mashed potatoes. It's also a great way to use up leftover turkey from Thanksgiving or Christmas. And because it's made with almond milk, it's a great option for people who are lactose intolerant.
