Zen Zucchini and Onion Rings
These Zen Zucchini and Onion Rings are a crispy, flavorful, and healthy alternative to traditional fried onion rings. Made with a combination of almond flour and coconut flour, they are gluten-free and have a slightly nutty flavor. The fresh rosemary adds a touch of herbalness, while the avocado oil provides a healthy dose of monounsaturated fats. These rings are perfect for snacking, appetizers, or side dishes.
The inspiration for these Zen Zucchini and Onion Rings came to me during a meditation retreat in the mountains of Colorado. As I sat in silence, surrounded by the beauty of nature, I began to reflect on the importance of balance in all aspects of life. I realized that this balance could be applied to food as well. These rings are a perfect example of how to create a dish that is both healthy and satisfying. They are made with wholesome ingredients, but they are also crispy, flavorful, and addictive. I hope you enjoy them as much as I do!

Why It Works
  • The combination of almond flour and coconut flour creates a crispy coating that is gluten-free and has a slightly nutty flavor.
  • The fresh rosemary adds a touch of herbalness that complements the sweetness of the zucchini and onion.
  • The avocado oil provides a healthy dose of monounsaturated fats, which are beneficial for heart health.
  • Baking the rings instead of frying them reduces the fat content and makes them a healthier option.
