Zen Zucchini and Corn Fritters

Ingredients
  • 1 cup grated zucchini
  • 1 cup fresh corn kernels
  • 2 eggs
  • 1/2 cup almond flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the zucchini, corn, eggs, almond flour, nutritional yeast, baking powder, salt, and pepper.
  4. Mix well until all ingredients are combined.
  5. Drop the batter by rounded tablespoons onto the prepared baking sheet.
  6. Bake for 15-20 minutes, or until the fritters are golden brown and cooked through.
  7. Serve immediately.
