Ingredients
1 cup quinoa
1.5 cups chicken or vegetable broth
1 carrot, diced
1 onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and black pepper to taste
Instructions
Rinse the quinoa in a fine-mesh sieve until the water runs clear.
Cook broth, vegetables, herbs, salt and pepper together in a medium saucepan.
