Ingredients
  • 1 cup quinoa
  • 1.5 cups chicken or vegetable broth
  • 1 carrot, diced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
Instructions
  1. Rinse the quinoa in a fine-mesh sieve until the water runs clear.
  2. Cook broth, vegetables, herbs, salt and pepper together in a medium saucepan.
  3. Bring to a boil, then cover and simmer for 15 minutes, or until the quinoa is cooked through.
