Tabbouleh is a traditional Lebanese salad that is typically made with bulgur wheat, tomatoes, cucumbers, parsley, mint, and olive oil. Quinoa is a gluten-free grain that has a similar texture to bulgur wheat, so it makes a great substitute in this recipe. I first tried quinoa tabbouleh at a restaurant in New York City, and I was immediately hooked. The salad was so light and refreshing, and the flavors were so bright and vibrant. I knew I had to recreate it at home. After a few tries, I came up with a recipe that I think is even better than the one I had at the restaurant. My recipe uses a combination of quinoa, cucumber, tomato, red onion, parsley, mint, olive oil, and lemon juice. The quinoa provides a hearty base, while the vegetables add freshness and crunch. The olive oil and lemon juice add a bright and tangy flavor. This salad is easy to make and can be served as a side dish or main course.
