Paleo Sushi Rolls
Paleo Sushi Rolls are a delicious and healthy way to enjoy sushi without the rice. They are made with cauliflower rice, tuna, avocado, red onion, cucumber, carrots, soy sauce, and sesame oil. The cauliflower rice is roasted until golden brown, which gives it a slightly nutty flavor and a chewy texture. The tuna is drained and flaked, and the avocado, red onion, cucumber, and carrots are chopped. All of the ingredients are then combined and tossed with soy sauce and sesame oil. The mixture is then spread onto a sheet of nori and rolled up tightly. The roll is sliced into 8 pieces and served.
The idea for Paleo Sushi Rolls came to me when I was trying to find a way to make sushi without rice. I had tried using quinoa, but it didn't have the right texture. I then tried using cauliflower rice, and it was perfect! The cauliflower rice had a slightly nutty flavor and a chewy texture that was very similar to rice. I then added tuna, avocado, red onion, cucumber, carrots, soy sauce, and sesame oil, and the Paleo Sushi Rolls were born.

Ingredients
  • 1 head of cauliflower, riced
  • 1 can (12 ounces) tuna, drained
  • 1/2 avocado, sliced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped carrots
  • 1 tablespoon soy sauce (optional)
  • 1 tablespoon sesame oil
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Spread the cauliflower rice on a baking sheet and roast for 15-20 minutes, or until golden brown.
  3. In a large bowl, combine the cauliflower rice, tuna, avocado, red onion, cucumber, and carrots.
  4. Drizzle with soy sauce and sesame oil, and toss to combine.
  5. Lay a sheet of nori on a bamboo rolling mat.
  6. Spread a thin layer of the cauliflower rice mixture onto the nori.
  7. Roll up the nori tightly, starting from the bottom and working your way to the top.
  8. Slice the roll into 8 pieces and serve.
