Ingredients
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 large carrot, peeled and diced
  • 1 large parsnip, peeled and diced
  • 1 large sweet potato, peeled and diced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss the root vegetables with the olive oil, thyme, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until tender and browned.
  4. While the vegetables are roasting, cook the quinoa according to package directions.
  5. Once the quinoa and vegetables are cooked, combine them in a large bowl.
  6. Stir in the parsley.
  7. Serve warm or cold.
