Paleo Shepherd's Pie
Shepherd's pie, a classic British dish, typically consists of a layer of ground lamb topped with a layer of mashed potatoes. This Paleo version swaps out the potatoes for a layer of cauliflower "mash" for a healthier and low-carb take on the comfort food classic.
The origins of shepherd's pie can be traced back to the 18th century, when Scottish shepherds would use leftover lamb from their flocks to make a hearty meal. The dish was originally known as "cottage pie," but was renamed "shepherd's pie" in the 19th century to differentiate it from the beef-based version. Today, shepherd's pie is a beloved dish in both the UK and the US, and there are countless variations on the classic recipe.

Why It Works
  • Using ground lamb gives the dish a rich and flavorful base.
  • The combination of onion, carrots, and celery adds sweetness and depth of flavor to the filling.
  • The frozen peas provide a pop of color and a touch of sweetness.
  • The beef broth adds moisture and umami to the filling.
  • The tomato paste adds a touch of acidity and richness.
  • The dried thyme and rosemary add a subtle herbal flavor to the filling.
  • The cauliflower "mash" is a healthy and low-carb alternative to traditional mashed potatoes.
  • The olive oil helps to brown the cauliflower and give it a crispy texture.
