Gut-Soothing Stuffed Bell Peppers
Ground turkey is cooked with chopped onion, celery, and carrots in a skillet until browned, and then bone broth, parsley, and oregano are added to the mixture and heated through. We chose a mirepoix of onion, celery, and carrots, which complements the turkey well without overpowering it.

Ingredients
  • 4 bell peppers
  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped carrots
  • 1/2 cup bone broth
  • 1/4 cup chopped parsley
  • 1 teaspoon dried oregano
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds and ribs.
  3. In a large skillet, brown ground turkey, onion, celery, and carrots over medium heat.
  4. Stir in bone broth, parsley, and oregano.
  5. Stuff bell pepper halves with the turkey mixture.
  6. Place bell peppers in a baking dish and add 1/2 cup water to the bottom of the dish.
  7. Bake for 30-35 minutes, or until bell peppers are tender.
  8. Serve immediately.
