Ingredients
  • 4 lamb chops
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 sweet potato, peeled and diced
  • 1 carrot, peeled and diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine the lamb chops, olive oil, salt, and pepper. Toss to coat.
  3. Spread the lamb chops in a single layer on a baking sheet.
  4. Roast for 15-20 minutes, or until cooked to your desired doneness.
  5. While the lamb chops are roasting, in a separate bowl, combine the sweet potato, carrot, parsley, and mint. Toss to coat.
  6. Spread the vegetable mixture around the lamb chops on the baking sheet.
  7. Roast for an additional 15-20 minutes, or until the vegetables are tender and browned.
  8. Serve immediately.
