Chia-Charged Pudding
This pudding is an excellent source of fiber and omega-3 fatty acids, which are both essential for gut health. It is also a great way to use up any leftover chia seeds you may have.

Ingredients
  • 1/2 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1/2 cup canned coconut milk
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • pinch of salt
Instructions
  1. In a medium bowl, whisk together the chia seeds, almond milk, coconut milk, honey, vanilla extract, cinnamon, ginger, and salt.
  2. Cover the bowl and refrigerate for at least 4 hours, or overnight.
  3. When ready to serve, top with your favorite toppings, such as fresh fruit, nuts, or granola.
  4. Serve immediately and enjoy!
