Ingredients
1/2 cup chia seeds
1 cup unsweetened almond milk
1/2 cup canned coconut milk
1/4 cup honey
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

pinch of salt
Instructions
In a medium bowl, whisk together the chia seeds, almond milk, coconut milk, honey, vanilla extract, cinnamon, ginger, and salt.
Cover the bowl and refrigerate for at least 4 hours, or overnight.
When ready to serve, top with your favorite toppings, such as fresh fruit, nuts, or granola.
