Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 large sweet potato
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
Instructions
  1. Preheat your air fryer to 400 degrees F (200 degrees C).
  2. Cut the chicken breasts into 1-inch pieces.
  3. Peel and cut the sweet potato into 1/2-inch cubes.
  4. Cut the bell peppers and onion into 1/2-inch pieces.
  5. In a large bowl, combine the chicken, sweet potato, bell peppers, onion, olive oil, chili powder, cumin, salt, and pepper.
  6. Toss to coat.
  7. Spread the mixture in a single layer in the air fryer basket.
  8. Cook for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
