Savory Air Fryer Roasted Vegetable Medley
This air fryer roasted vegetable medley is a quick and easy way to get your daily dose of vegetables. The vegetables are tossed in olive oil, thyme, rosemary, salt, and pepper, then roasted in the air fryer until tender and browned. This dish is a great side dish for any meal, or can be served as a main course with a side of rice or quinoa.
I first developed this recipe when I was looking for a quick and easy way to get my daily dose of vegetables. I had tried roasting vegetables in the oven before, but it always took too long and the vegetables would often get overcooked. I decided to try roasting them in the air fryer, and I was amazed at how quickly and evenly they cooked. The vegetables were also perfectly tender and browned, with a slightly crispy exterior. I've been making this recipe ever since, and it's become a favorite of mine and my family.
