I've always been a fan of roasted tomato dips, but I've never been a fan of the hassle of roasting tomatoes in the oven. It's a messy process, and it takes forever. That's why I was so excited when I discovered that you can roast tomatoes in the air fryer. It's so much easier, and the results are just as good, if not better.
Prep time: 15 | Cook time: 15 | Serves: 4
Ingredients
2 pounds Roma tomatoes, halved
1/2 cup chopped fresh basil
1/4 cup olive oil
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/8 teaspoon dried oregano
Instructions
Preheat air fryer to 400 degrees F (200 degrees C).
In a large bowl, combine the tomatoes, basil, olive oil, lemon juice, salt, black pepper, garlic powder, and oregano.
Spread the tomato mixture in an even layer in the air fryer basket.
Air fry for 15-20 minutes, or until the tomatoes are soft and slightly browned.
Remove the tomatoes from the air fryer and let cool slightly.
Transfer the tomatoes to a blender or food processor and blend until smooth.
Serve the dip immediately or refrigerate for later use.
Why It Works
Roasting the tomatoes in the air fryer concentrates their flavor.
The basil, olive oil, and lemon juice add brightness and acidity.
The result is a dip that's both flavorful and refreshing.
