These fritters are a quick and easy way to get your vegetables in. They're made with just a few simple ingredients, and they're cooked in the air fryer so they're nice and crispy. Serve them with your favorite dipping sauce for a healthy and satisfying snack or side dish.
I first came up with this recipe when I was looking for a way to use up some leftover zucchini and bell pepper. I had tried making zucchini fritters before, but they always turned out mushy. This time, I decided to add some bell pepper to the mix, and I also cooked them in the air fryer instead of the oven. The result was a crispy, flavorful fritter that was perfect for dipping in my favorite sauce.

Why It Works
  • The zucchini and bell pepper provide a good amount of vitamins and minerals.
  • The almond flour adds a nutty flavor and helps to bind the fritters together.
  • The eggs help to hold the fritters together and give them a tender texture.
  • The air fryer cooks the fritters quickly and evenly, resulting in a crispy exterior and a tender interior.
